Lobster Chowder Recipe

8 .. TBSP (1 stick) unsalted butter

1 .. MED. onion, chopped in 1/2-inch dice

3 .. LRG russet potatoes, peeled and cut into 1/2-inch cubes

6 .. CUPS lobster broth OR cold water

1/2 .. TSP. sea salt

1/4 .. TSP. freshly ground black pepper

2 .. CUPS cooked lobster meat, chunked.

3 .. CANS evaporated milk

1 .. TSP. dried basil

1 .. CUP milk or cream, if necessary

1. In large kettle over low heat, melt 2 TBSP butter. Add onion, stir, and cook until soft, about 5 mins. Add potatoes & 6 cps broth/water, and bring to simmer. Season with salt and pepper. Cook for about 30 mins, til potatoes begin to soften.

2. In a lrg skillet over med. high heat, melt 2 TBSP butter. Add about 1/3rd of the lobster & saute for about a minute or so. Set aside. Repeat w/remaining lobster & butter.

3. Add lobster to onion/potato mixture; stir over med. heat. Add canned milk & basil, to taste, adjust seasoning w/add’l salt & pepper. If too thick, add milk or cream.

Serves 12

    I have just revised my blog! The Farmers’ Market wasn’t opening today… it’s next Saturday! Eeek! Paul did all his prep work and got up there at 8:30 to set up and No One Was There! This could only happen to us… honest-to-gawd. He spent $13 on ice cubes, too, to keep the lobsters cold and we have no place to keep them, plus he’s already put the lobsters on top of them in the chest. So he’s home now “fiddling and diddling” around here!!! Oh he’s livid!

    After I put up this blog, Paul went food shopping where they sell live lobsters and he found out they’d reduced the price on lobsters by $2 per pound, so I had to revise our prices then, as well. We sell at the lowest price of anyone around here… which was another big blow to him, so those prices, Teri, were $2/lb higher than they really are now!

    Oh woe is us!

  4. I think local entrepreneurs, like Paul, are the backbone of a healthy economy! He is honest, hard working, and works because he loves it, the best kind of business person in the world.

    I love lobster, only had a few times in my life, as it is extremely expensive where I have lived.

    Over here, when they’re having a sale on lobster tails (just tails) the 4 oz tails are 4.99 to 5.99 EACH. Not even per pound, EACH.

    Just goes to show what a good price folks are getting from Paul.

    Teri, a chicken lobster is about 1 lb. A medium is 1.25 to 1.5 lbs, and a large is about 2+ lbs. Culls have only one claw.

    I’m with Wendy, I would love to have a Memorial Day lobster! Wish we could get fresh caught ones here.

    Ah, no we won’t get lobster – but we are having a freshly caught cod fish that I can’t wait to cook up and eat. Haven’t had fresh fish in a long time!
